Grated Zucchini Chocolate Cake

  • 2 c all-purpose flour
  • 3 lrg eggs room temp.
  • 1 c cocoa powder sifte
  • 1 1/2tsp vanilla extract
  • 2 tsp baking soda
  • 2c grated zucchini
  • 1/2 tsp salt
  • 1 c chocolate chips
  • 1 1/2 c brown sugar
  • 3/4 c canola oil
  • 1/4 c melted butter cooled to room temp.
  • 1/4 c buttermilk room temp


  1. Preheat oven to 350°F and grease a 9×13” pan (or 2 round cake pans) and set aside.
  2. In a medium bowl, combine flour, sifted cocoa powder, baking soda & salt. Whisk together and set aside.
  3. In a large bowl, combine brown sugar, oil, melted butter, buttermilk, eggs and vanilla extract. Whisk until combined & stir in dry ingredients until just combined.
  4. Gently squeeze out some the moisture from the grated zucchini and add this and chocolate chips and stir until combined. Don’t overmix.
  5. Pour cake batter into the pan and smooth with spatula. Bake for 25-32 min (more if glass pan) or until toothpick comes out clean. Cool cake and top with favourite icing.
