Grated Zucchini Chocolate Cake

Ingredients
- 2 c all-purpose flour
- 3 lrg eggs room temp.
- 1 c cocoa powder sifte
- 1 1/2tsp vanilla extract
- 2 tsp baking soda
- 2c grated zucchini
- 1/2 tsp salt
- 1 c chocolate chips
- 1 1/2 c brown sugar
- 3/4 c canola oil
- 1/4 c melted butter cooled to room temp.
- 1/4 c buttermilk room temp
Instructions
- Preheat oven to 350°F and grease a 9×13” pan (or 2 round cake pans) and set aside.
- In a medium bowl, combine flour, sifted cocoa powder, baking soda & salt. Whisk together and set aside.
- In a large bowl, combine brown sugar, oil, melted butter, buttermilk, eggs and vanilla extract. Whisk until combined & stir in dry ingredients until just combined.
- Gently squeeze out some the moisture from the grated zucchini and add this and chocolate chips and stir until combined. Don’t overmix.
- Pour cake batter into the pan and smooth with spatula. Bake for 25-32 min (more if glass pan) or until toothpick comes out clean. Cool cake and top with favourite icing.
